According to Merriam-Webster online, fermentation is “an enzymatically controlled transformation of an organic compound.” Or in layman’s terms, it makes things freaking delicious. This weekend at the Highlands Masonic Center the Fermentation Festival will be serving out all of your favorite effervescent goods as well as offer a number of classes to show you why you need to learn how to home-ferment your own cabbage and beets. Yeasts are our little friends, don’t be afraid! If our ancestors didn’t accidentally discover it’s importance in beer, where would we be now?

I’d recommend the kombucha (fermented tea) class myself, and definitely try to grab your own scoby mother while you can.

You can also find PJ roaming about at Curly Wolf in Fisco on Saturday. He’ll be enjoying some amazing booze and BMX stunts and you should, too.
