Orange Spice Cupcakes with Peach Street Distillers’ Peach Brandy

This whole summer thing?  Yeah, I’m over it.  As a result I decided to make some cupcakes that remind me of fall.  It is my personal way of trying to force a change in the seasons.  A little bit of fruit, a nice dash of spice, and the use of a brown spirit in the frosting.  Now you could use any ol’ peach brandy but let’s be honest, Peach St. Distiller’s Peach Brandy is fucking money so just use it. And while you’re at it pour some for yourself. You’ve earned it.

Makes approximately 24 cupcakes.

Cupcake:

  • 2 1/3 cup flour Orange spice cupcake!
  • 1 1/3 cup sugar
  • 2 tsp. baking powder
  • 1/2 cup butter
  • 2 eggs
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • juice and zest from 2 large oranges

Frosting:

  • 4 oz cream cheese
  • 1/2 cup butter
  • 4 cups confectioner’s sugar
  • 4 Tbsp. peach brandy

Combine all ingredients for the cupcakes in a large bowl. Blend until smooth.  Pour batter into lined cupcake pans.  Bake at 375˚ for 15-18 minutes or until a toothpick inserted into the center of the cupcake comes out clean.

While cupcakes are baking, combine all ingredients for frosting in a large bowl, adding confectioner’s sugar gradually.  Once cupcakes are cool, frost and enjoy!
