Welcome to our new series, Original Cocktails, where we will focus on our favorite barmen/barwomen around Denver and the cocktails they have artfully crafted. You should be well aware of the city’s love of great drinks by now, so the hope is to make that bond even tighter by highlighting some of the magic that goes on behind the scenes. Each post will feature a new original drink, made by its creator with a unique spin on the ingredients and technique.
For our first installment, we visited The Cove at Star Bar on a hot day to have Britt Henze whip us up a fantastic tiki-style drink called the Polynesian Pearl. A healthy does of rum, fresh juice, some mystery mix and an egg white turned out to be just the thing to beat the heat. Garnished appropriately (tiny umbrella and all), we sat in the shade and drank our frothy cocktail, looking really cool while doing so.
