Blueberry Lime Cupcakes
It’s summer time again kids and that means light and fruity rules the streets. One killer combo I have discovered is blueberry and lime. Nice and tart with a bit of juicy sweetness. The beer I chose to use for this recipe is Wild Blue blueberry lager. On its own it is far too sweet for me to drink, but good hot damn it is awesome in baking.
Makes approximately 24 cupcakes.
Cupcake:
- 1/2 cup butter

- 2 limes juice and zest
- 1 cup sugar
- 3 eggs
- 2 1/2 cup flour
- 1/2 tsp baking powder
- 1/2 cup + 1 Tbsp. milk
- 1 Tbsp. vanilla
- 1 small package fresh blueberries
- Green food coloring if desired
Frosting:
- 4oz cream cheese
- 1/2 cup butter
- 3 cup confectioner’s sugar
- 5 Tbsp blueberry beer
As always, begin by measuring out the beer for the recipe and set aside. Pour the remaining beer into proper glassware and enjoy. For the Wild Blue I recommend blending with a wheat beer to enjoy as it is too sweet on its own. Preheat oven to 375°. In a large bowl, mix together all ingredients for the cupcakes minus the blueberries. Beat until smooth. Gently fold blueberries into the mixture. Pour mixture into lined cupcake pans. Bake for 15-18 minutes or until a toothpick inserted into the center of the cupcake comes out clean. For the frosting, mix all ingredients in a large bowl and beat until the desired consistency is reached, approximately 3 minutes. Once cupcakes have cooled, frost and enjoy!
