Caramel Apple Cupcakes

pre-caramel apple cupcake  As with so many things in my life, these rad little treats were influenced by beer.  One of my more recent homebrews was a caramel apple saison that was just lovely so I decided to translate it into cupcake form.  As with any of my recipes begin by measuring out the beer needed for the recipe then pour the rest into a glass and enjoy while you bake.

Makes approximately 24 cupcakes.

Caramel goodness Cupcake:

  • 2 1/3 cup flour
  • 1 1/3 cup sugar
  • 2 tsp baking powder
  • 1/2 cup butter
  • 1 1/4 cup Lindemans Pomme (or other rockin’ apple beer)
  • 2 eggs

Frosting:

  • 4oz cream cheese
  • 1/2 cup butter
  • 3 cup confectioners sugar
  • 5 Tbsp Van Gogh Dutch Caramel vodka

Additional:

  • Caramel Candies

Optional:

  • Green food coloring

 Combine all cupcake ingredients as well as the green food coloring if desired into a large bowl.  Blend until smooth.  Pour batter into lined cupcake pans.  Place one caramel candy into the center of each cupcake.  Bake at 375˚ for 13- 18 minutes or until a toothpick inserted into the center of a cupcake comes out clean.  While cupcakes are baking mix together all ingredients for the frosting and blend until smooth.  Let cupcakes cool then frost, devour, dance and enjoy.
