Funkwerks and Mile High Wine and Spirits collaborate on a dark strong Saison

Funkwerks, the Saison-only brewery from Fort Collins, are collaborating with Mile High Wine and Spirits in Lakewood. The beer is called Solstice, and it’s a dark strong Saison.

This limited batch is a dark strong saison that was brewed in October as a collaboration with Mile High Wine & Spirits. A portion of the batch was aged in oak bourbon barrels, which was then blended with the non-barrel aged batch. The result is a full-bodied beer with flavors of chocolate and dark fruits that are balanced by spicy oak tannins. Rich aromas of vanilla and oak linger in the dry finish, making this beer incredibly drinkable.

Founder Brad Lincoln has this to say about the brew:

This project came about after talking with André over the summer. Mile High has barrels left over from their single barrel project with Buffalo Gold. André thought the bourbon would mesh nicely with a dark Belgian beer. We agreed, so Gordon, our brewmaster, came up with a dark strong recipe that we aged in the barrels.

There’s a tasting at Mile High Wine and Spirits next Saturday, February 11th.
