Mint Chocolate Cupcakes

It’s about to get all kinds of festive up in here! Or something to that effect.  Last week the lovely ladies Jess & Jen announced that they would be hosting a festive holiday party for their ragtag group of friends.  Per usual for a get together with this group, it would be potluck style as far as food goes. So naturally, I decided to bring cupcakes. Not just any cupcakes, but festive as shit cupcakes.  So without further adieu, I present my festive mint chocolate cupcakes.

Now before we get started, just know that you can do a single batch and just split the frosting in two or you can do a double batch of cupcakes and have two separate batches of frosting, which is what I did because sharing is caring.

Makes approximately 24 cupcakes.

Cupcake:

  • 2 1/3 cup flour
  • 1 1/3 cup sugar
  • 2 tsp. baking powder
  • 1 Tbsp. baking cocoa
  • 2 1/8 cup Great Divide Chocolate Oak Aged Yeti (or other chocolate stout)
  • 2 eggs

Frosting:

  • 4 oz cream cheese
  • 2 Tbsp butter
  • 2 cup confectioner’s sugar
  • red food coloring
  • green food coloring
  • spearmint tea
  • peppermint tea

Spearmint Tea:

  • 1 Tbsp dried spearmint
  • 2 Tbsp boiling water

let steep for 30 minutes strain and add to half of frosting

Peppermint Tea:

  • 1 Tbsp dried peppermint
  • 2 Tbsp boiling water

Begin by preheating your oven to 375˚.  Measure out beer for recipe and set aside.  Pour remaining beer into proper glassware and enjoy as you work.  Combine all ingredients for cupcakes in a large mixing bowl.  Beat until smooth.  Pour batter into lined cupcake pans.  Bake for 16 minutes or until a toothpick inserted into the center comes out clean.  For the frosting combine all ingredients besides the flavoring and food coloring into a large bowl.  Beat until smooth then separate as evenly as you can into two separate bowls.  Add green food coloring and the spearmint into one bowl and red food coloring and peppermint into the other.  Let cupcakes cool, frost and enjoy!
