Tropical Fruit Salad Cupcakes

These dense little nuggets of goodness were inspired by the ridiculous monsoon like weather Denver experienced throughout the summer, as well as by the return of Maui’s Mana Wheat (one of my favorite beers) to the Denver area.  If the beers for these cupcakes cannot be located, you would do just fine substituting natural fruit juices, but really baking is way more fun when booze is involved.  As per usual, the first step in these baking is to measure out the beer needed in the recipe and set aside.  The remaining beer should the be poured into proper glassware and enjoyed while you work. Preheat oven to 375°.

Makes approximately 24 cupcakes.


○  2 1/3 cup flour

○  1 1/3 cup sugar

○  2 tsp baking powder

○  1/2 cup butter softened

○  2 eggs

○  1 1/2 cup Kona Wailua Wheat ( or other light passion fruit beer)

○  1 1/2 cup diced mango (fresh if possible)

Warm glowing goodness.


○  8oz cream cheese

○  3 cup confectioners sugar

○ 4 Tbsp Maui Mana Wheat (or other light pineapple beer)

○ diced pineapple optional for garnish (remember fresh is always better)

Combine all ingredients for the cupcakes into a bowl, blend until smooth. Pour batter evenly into lined cupcake tins.  Bake for 21 minutes or until a toothpick inserted into the center of cupcake comes out clean.

While cupcakes are baking, mix all ingredients for frosting in a large bowl.  Beat until a desired consistency is achieved, approximately 3 minutes. Chill in fridge until ready to use.

Once cupcakes are finished baking, cool, frost and enjoy!
